There’s nothing hotter, sweeter or cooler than BTS’ hit song “Butter.” Except maybe the New York State Fair butter sculpture.

American Dairy Association North East spokesperson Greg Szklany confirmed to syracuse.com | The Post-Standard that the annual NYS Fair spectacle can be seen in person this year thanks to the lifting of Covid-19 restrictions. He wouldn’t give any hints about a possible theme for the 2021 butter sculpture, but said sculptors Jim Victor and Marie Pelton will be returning to craft the display that serves as the centerpiece for the Dairy Products Building.

“We’re excited to see it,” Szklany said. “It’s one of the best kept secrets in town.”

The butter sculpture is expected to be unveiled on Thursday, Aug. 19, the day before opening day of the 2021 NYS Fair on Friday, Aug. 20.

New York State Fair spokesperson Dave Bullard said earlier this week that the Fair is now planning on 100% capacity in all buildings due to the large number of New Yorkers who have been vaccinated. That means the fair will operate the same in 2021 as it did before the coronavirus pandemic, with no limits on people entering the Dairy Products Building or other indoor venues.

There was no 2020 NYS Fair due to the pandemic, but Victor and Pelton still made a butter sculpture last year that referenced virtual learning in schools. They have carved the NYS Fair butter sculpture every year since 2003.

But because people couldn’t see the butter sculpture in person last year, the Fair and the American Dairy Association created an online butter sculpture contest that invited fans to build their own creation at home.

Szklany said this year’s Fair will also bring back the milkshake contest — both virtual and in-person — for Dairy Day on Aug. 26. The in-person contest will be held that day, while fans will be able to vote online for virtual entries beforehand and the winner will be announced on Dairy Day.

The butter sculpture, a New York State Fair tradition for more than 40 years, features 800 pounds of butter carved over 10 days by Victor and Pelton, a husband-and-wife team from Conshohoken, Pennsylvania. Once the fair is over, the butter sculpture will be broken down and recycled in methane digester — along with food scraps and cow manure — to create electricity and liquid fertilizer for crops.
